Step-by-step instructions for the pretzel sticks
Step 1 Add the water, dry yeast and white granulated sugar into your mixing bowl. Stir with a fork or a whisk. Let it sit for 15 mins to activate the yeast.
Step 2 Sift the bread flour into the mixing bowl, then add the salt and vegetable oil.
Step 3 Knead the dough for 4 mins, either by hand or with your kitchen mixer on medium. The dough should easily come off the side of the bowl or off your hands once done.
Step 4 Cover the mixing bowl with a plate, and let the dough rise in the bowl for 1 hour at room temperature.
Step 5 The dough should have roughly doubled in size after that 1 hour. Remove the dough from your mixing bowl and place it on your kitchen counter.
Step 6 Use a knife or dough cutter to cut the dough into six pieces of similar size.
Step 7 Roll the dough with your hand until each dough strand is about 20 cm / 8 in long.
Step 8 Space each dough strand a few centimeters / inches apart on top of a baking mat on a cookie sheet.
Step 9 Handle the food grade lye *only* in a well ventilated area while wearing kitchen gloves or surgical gloves to avoid burning yourself and toss the gloves into the trash after use. Keep the food grade lye away from children at all times! Add the water to a cup. *Only thereafter* add the food grade lye to the water. Stir with a spoon to combine.
Step 10 Use a food brush to coat each dough strand with two layers of the water/food grade lye mixture. Preheat your oven to 175°C / 350°F. Let the dough rise for another 20 mins in the meantime.
Step 11 Brush the dough strands with a third layer of the water/food grade lye mixture. Then sprinkle the coarse sea salt across the dough strands. Bake in your oven for 20 mins.
Step 12 Remove the cookie sheet from the hot oven, using oven gloves. Let the pretzel sticks cool on your kitchen counter while still on the cookie sheet for 10 mins.
